Komi Saryo Juhyoya Inuyama Inoue Residence

Juhyoya Inuyama Inoue Residence is located in the historic castle town surrounding Inuyama Castle, a National Treasure of Japan. Housed in an atmospheric building designated as a Registered Tangible Cultural Property, the restaurant offers a peaceful setting that feels like stepping back in time. One of its highlights is the creative use of Moriguchizuke, a traditional Aichi pickle, in both savory dishes and sweets. Set meals featuring fish or meat marinated in mirin lees offer a rich depth of umami. Another must-try is the Moriguchizuke soft-serve ice cream, the shop’s signature treat that was named the No. 1 local soft-serve ice cream in the Tokai area. Its mellow combination of Moriguchizuke and mirin lees is enjoyed by visitors from Japan and abroad. Another great way to enjoy the castle town is to stroll through its historic streets with a fragrant grilled rice skewer flavored with soy sauce in hand. So, what exactly is Moriguchizuke? It is one of Aichi’s most iconic traditional pickles, made by slowly pickling long, slender Moriguchi daikon radishes, which can grow to over one meter in length, in sake lees and mirin lees. The only ingredients are Moriguchi daikon, sake lees, mirin lees, sugar, and salt. All are closely connected to the region, making Moriguchizuke a food culture nurtured by Aichi. Its gentle sweetness and layers of umami also make it popular with children. In recent years, the restaurant has also welcomed a growing number of international visitors. It is a highly recommended place to enjoy delicious food while experiencing Aichi’s rich fermented food culture.
