It sits along Prefectural Route 77, extending from Kagamishima Ohashi Bridge. The shop’s signature products include “Oishii Vinegar”, “Oishii Soy Sauce”, and “Oishii Miso” — all carefully crafted to highlight the rich flavors of traditional fermentation. Many of the fermented foods sold at HAKKOU SHOP are produced from scratch using premium raw materials at the Chita Peninsula, known for its long history of fermented food production, and the Shokawa Research Institute in Gifu Prefecture, where the clean environment is ideal for fermentation. These products are also used in vinegar, cosmetics, and supplements. Among the most popular items, Oishii Vinegar is slowly fermented using the traditional Seichi Fermentation method. Ingredients are placed in wooden barrels and left to ferment naturally, without any air conditioning — a process that preserves the authentic techniques of the past. The result is a vinegar with mild acidity and a smooth, mellow taste. It can be enjoyed diluted with water as a refreshing drink or used for pickling vegetables.
