The miso soup served in the evenings uses Shinshu Kogane miso, which requires half a year to make. We choose the best miso depending on the ingredients and the person eating it, such as using red miso from Shinshu for the beef stew with spices. Each store showcases its distinct touch, with people commenting, "The Nagoya store has a stronger taste than the Tokyo store." We are also particular about the brewing environment for the miso. All of the store's miso is made in Shinshu, and this environment is said to be the best for making miso.
