Kojiya

Founded in 1855, the shop is located in Tsushima City, west of Nagoya, and continues to produce koji using the same traditional methods as when it first opened, drawing underground water from the abundant Kiso River. They also use locally grown rice, especially the "Aichi no Kaori" variety, as their main ingredient, and take pride in their condiments, such as amazake (sweet sake), shio koji (salted koji), soy sauce koji, and Kinzanji miso. Recently, their koji-based sweets—such as chiffon cake, gelato, pudding, and smoothies—have become especially popular among visitors. They also offer handmade miso-making classes during the winter.
